Indestructible Sweet Scones
Feb. 4th, 2010 10:03 pmI posted a recipe for cheese scones long ago, but somehow I never got around to posting my recipe for Indestructible Sweet Scones.
This is an outrage. These scones are quite possibly the most delicious thing you will eat all week, and as a bonus, they are honest to God indestructible. I've forgotten the sugar, the salt, the baking powder, or the baking soda. I've replaced the buttermilk with regular milk. I've used half the butter the recipe called for. I've baked these puppies in ovens fifty degrees give or take from the temperature suggested.
In every case - no matter what outrage I perpetrated upon these scones - they turned out delicious.
If, however, one follows the recipe properly, these scones are not merely delicious but quite possibly divine.
I give you....
2 cups flour
1/4 cup sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 cup butter
2/3 cup buttermilk
Preheat the oven to 400 degrees F. Mix dry ingredients, then cut in butter. If you're adding things - chocolate, cranberries, blueberries, raisies, whatever - stir them in now. (Today I made chocolate chip cranberry scones. The people who ate them almost levitated.) Add the buttermilk and stir till the dough comes together - as little as possible, or they may get tough.
If you want to garnish them, brush with an egg wash or sprinkle a little sugar on top, but they're just as delicious plain.
Bake 15-20 minutes on a parchment-paper lined sheet. The shortest baking time possible is best.
Scones get stale swiftly, so eat them as soon as possible. The recipe makes about eight scones, depending on the size.
