Deconstructed Pie
Mar. 28th, 2014 10:44 pmCan it be that this cruel winter might finally, haltingly, draw to a close? I saw the first crocuses of spring today.

I've been selling off my old academic books with the help of my friend Paula, and as we were attending a ballet together this evening, we decided we should spend the proceeds on a delicious, delicious pre-ballet meal.
The mussels were tasty. The pizzetta with gorgonzola and prosciutto and honey was great. But at the end of the meal, we got chocolate pecan caramel pie a la mode, and it was...well.

It was, in short, deconstructed pie. We were both so dubious that we actually asked the server to identity the parts of the pie. The graham cracker and chocolate cookie crumbs scattered as a garnish represent the crust. The puddle at the right that looks like melted ice cream is the brown butter ganache filling. The pecan-dotted balls represent the topping, and within that pecan shell is the vanilla ice cream.
It was amazing. The brown butter ganache alone was worth the (rather steep) price. Such caramelly complexity of flavor!
