I have recently become obsessed with sweet potatoes. They're like candy! But healthy candy. It's a delicious paradox.

Super Special Awesome Sweet Potato Oven Fries

1 sweet potato
oil
salt
rosemary (the rosemary is what makes them Super Special rather than merely Awesome)

Preheat oven to 450 degrees Fahrenheit. Peel the sweet potato and chop it into fries. (The original recipe says they should be 1/2 inch thick, but I like mine thinner than that.)

Coat fries in oil. I put the oil in a plastic bag and then put the fries in and shake it - much less messy that way, and nothing to clean.

Lay fries on parchment-lined baking sheet and bake for 15 minutes. Take the fries out and turn them, then bake for another 10 minutes. (If you make them smaller than 1/2 inch you'll want to cut a few minutes off the baking time, probably.) When they are done, sprinkle with salt and rosemary and eat while piping hot.
