A book from the period about physical therapy would be FANTASTIC, especially given that the character in question is himself a doctor (although in private practice by the time the story begins, so probably not dealing with loads of fellow amputees on a daily basis).

Handley-Cousins mentions that Chamberlain wrote copiously about the Civil War, but very little about his own wound; my impression is that the nitty-gritty everyday details of war wounds were considered too private to share in most 19th century memoirs, so memoirs might not be that useful overall.

I'll have to poke around JSTOR at some point. (It may be some time; this is background for a project that is on the backburner right now.) Will let you know if I need anything!
